Whole-bunch pressed Pinot Noir from Highweald's Sussex estate, with a touch of our own estate-grown Pinot Noir Précose blended in for colour and character. The result is that pale salmon in the glass - precise, deliberate, and distinctly ours.
On the nose: wild strawberry, raspberry, and a whisper of white flower. On the palate: crisp and dry, with red berry, peach, and a clean mineral finish. Bottled unfined. 11% ABV.
